You gotta really get the rear end moving in the wrong direction for PSM to kick in if it's off. I turn PSM off all the time and fly around turns and can't think of a time it ever kicked in.

There is a secret way to turn off the ones on the benz, however it will eliminate abs and other safety features. This setup is generally recommended when you dyno the car.

On my '06 S, I would turn off stability control and I was able to slide it pretty well... I can't tell you if it was working or not since my eyes were on the road, but my wife could certainly tell we had a nice drift angle.
