Good nigiri or sashimi just needs a tiny bit of soy sauce with wasani in it.

You only have to use a lot if you eat at 10 dollar all you can eat sushi places that you really shouldn't be going to.

etiquette is as you describe. after putting a little wasabi, a light dip in the soy is ok. most of the time, that is too much of a pain for me. i often mix the soy with the wasabi. the only downside is if you actually have a dish that requires some soy with no wasabi, then you have to get a second dish.

while we're on etiquette, don't pour the soy on your rice and don't ever stick you chopsticks in the rice point down.

Great thread. For anyone looking for good sushi in London I would recommend Umu in Mayfair.

Kabuki - 10/10/10

Had a lot of okra tonight. Yum!

Crab Stuffed Okra Tempura



Spicy Okra - Okra, fern shoots and small river crabs tossed in Japanese chili paste.



Ika Geso - Squid legs, lightly salted and broiled served with ponzu marinated okra and bonito shavings.



Mussels and Okra - Saute'd mussels and okra in garlic, lemon butter.



Tonkatsu - Felt like a little meat last night so I ordered so pork cutlet.

If anyone is ever in the Agoura Hills California area I highly recommend Wasabi Sushi on Kanan Rd and Lou the sushi chef is really good. After dinner take your nice car for a 12 mile drive down Kanan to PCH. Great road with 3 tunnels...just watch for CHP and only speed in tunnels (tunnels are one way traffic) so they don't see you.

FWIW, one of the partners of this restaurant passed last week. My daughter considered her as another grandma. She will be missed. Anyway, I went for lunch to talk to everyone and get the info for the memorial service.

Stuffed Squid - Baby calamari stuffed with halibut, asparagus and avocado. Served with shaved sweet onions and ume, pickled jalapenos and pickle miyoga.



Spicy Asari - I brought some Hawaiian chili peppers that a buddy grew in his garden. They used it to make some sake steamed clams with asparagus and mushrooms.



Hotate - Live scallop, 4 ways - sashimi, garlic saute, himo (gasket) with su miso, ankimo (liver) with ponzu and spicy radish.



Salad Roll - Just some greens to round out the meal.



Employee Lunch - Chicken and vegetable soup, stewed fish and turnip, mabo tofu. I wish I had room for this.

Gary you mean Sushi and Wasabi in the shopping center with Agoura Deli? Wifey and I went there, and wasnt all that impressed. You have to Try Tomadachi in Westlake!!

Kram your killing me!! I need my sushi fix now....

you guys are close enough to the valley that you should try the places i post. it's not that the places you mention are bad, but they cater to a different clientele.

did a double header and went back for dinner, but wasn't that hungry.

Hamachi Tataki - Peppered crusted yellowtail belly with a cilantro soy sauce.



Fried Calamari - Avocado sauce, masago, sriacha.



Spicy Salmon Skin Salad - Had a few more Hawaiian chilis. This was super hot, but oh so good.
