If you are near a store, they have the OS5 stored locally and it only takes seconds to update.

The issue is the devices have to talk to an Apple server in order to restore (e.g. put the new firmware on the device). Those servers are absolutely pounded right now, so it will take a few tries to make it work. Took me ~3 tries.

Apple is certainly increasing server side capacity, so it should not be an issue for very much longer.
