Now the exhaust note of the 997 GT3 def makes that car special and "unforgettable" imo. But why are so many other Porsches like the 996s or even some of the 997.1's being forgotten about and have become increasingly unpopular and undervalued whereas the 993 or even a 930Turbo would hold its value?

As was already said, the 993 was not a classic until recently. At first it took a hit just like most other cars. But when most reflect back on older models, the 993 stands out with many positives over the others. One thing that comes to mind is that when it came out, I dont think there were many other sports cars with comparable performance, I could be wrong on this.
The 996 and 997 have many competitors for much cheaper. My 03' M3 performed better then most 996 models.
My BMW 650i performed just as good in handling and acceleration then a 997.1 4S, but cost 30k less. The 650 also had more room and much more amenities. Also the M3 were giving the 911's a run at much lower costs.
BMW's engineering is not that much inferior to that of Porsche either.
Once I got a 997.2S, I have not looked back at BMW.

650i handled just as well as your 4S? Maybe in a straightline. No way you've taken both out and actually cornered them like they are meant to be cornered. 650's are big phat pigs.

I've never understood the whole M3 comparison. They don't handle close to a 911 on a track. They feel 30% heavy for their size and just can't compare at all.
911's are 47 years old.
This alone sums up the OP's question. Name another car design that has lasted this long with year after year sales bettering the previous.
It's just a fantastic machine that has continued to kill race circuits world wide and will continue to do so for my guess 10 plus more years.
Disclosure: I may like Porsche's.
