I think 700whp is achievable on a GT with a tune, pulley, full exhaust, and intake. If I'm not mistaken that's the case on the GT500.
Mark as you mentioned they are bulletproof for the most part - to my knowledge Heffner doesn't touch the internals on the TT builds.

The scud is just not a friendly road car. Period. Its uncomfortable, loud, bumpy, etc. Its made for the track, but who can afford to constantly track and beat up a 300k Ferrari? Most people, including myself decided its just not a great car for weekend cruises. Track fine - but weekend cruise, long drives, car shows.....forget it.

Hard to compare the GT500 and GT blowers as the stock SC on the GT is decently sized - it's a 2.3L unit made by Whipple versus the Eaton M112 on the GT500 which is 1.8L. So where the GT500 may need an upgrade, the GT may not.
As far as values are concerned the one important piece of the puzzle in my mind when it comes to the Ford GT is that it was a recreation of an iconic car by a company that doesn't always make something in that arena. Ferrari is an exotic/supercar company, therefore the expectation is that their next creation is always going to exceed their last. I think this plays into the values to the extent that there probably will not be another Ford GT, but there's always going to be a better Ferrari, and certainly more Ferrari sports cars in the "same league" if you will.

But why would a 2004 CS be worth 140K and a 2008 Scuderia be worth $175-185K. The Scud is superior from engine/F1 standpoint. It might not as pretty but is is vastly superior from a performance standpoint. So it is purely the fact that the CS production volume is 400 while Scuderia volume is 3500?
