You can try Norway's fjords, never visited it myself but some friends of mine went to Alesund and had a really great (and relaxing) time.

Tahoe, Telluride, or Seattle. Tahoe is unreal that time of year. It would be a very long drive but i'm confident you can rent jeeps etc. there. Maybe PM big slacker re: this.

i have been, its in the mountains outside of knoxville, tn. very nice put pricey.

be very careful if you eat there tho on the property. last time i was there they do not have pricing on the menu and the bill for 4 for about 2hrs was $900+it was very good but not that good
