Jiro is the living legend but, in Tokyo, it's pretty hard to call someone "the best." just like cars, there are different styles.
my personal favorite is Sawada - it received 2 michelin stars but the fish is the best i've ever had. it also quickly races past $500, depending on what's in season.
i saw a glimpse of perfection at Mizutani (who's a Jiro disciple & is featured in the movie) for two pieces where rice & fish were an amazing one. but only two out of 12 pieces.
it's impossible for a non-Japanese to get a reservation at Jiro; you must be accompanied by a Japanese person and, by some accounts, some who is from Tokyo. lunch is rapid-fire and the few people i've known that have gone have been in & out in 45 minutes, $300 later. not sure if it's my kind of place.

I have since been back to Mori again, and the second time was just as enjoyable as the first time. Don't know if they are still Michelin rated, but they were (are?) one or two stars.
Maybe after I have been there a few more times I can slow down and take some pictures. But the two times I have been there have been so great that taking pictures really was the furtherst thing from my mind.
The mrs is normally not an Uni and roe person, but it was so good that she actually quite liked it.
