Beverly Hills - Which hotel should I choose?

I'm open to anything, price isn't an issue. Keep away from the Michelin star type gastronomy though...

I guess, I wasn't in that mindset...this came up last minute. I almost did Vegas b/c I have a couple nights offered but I already have 3 other trips coming up there this year. Thought this might be a different getaway for the 2 of us.

I like the Beverly Hilton and Mr. H's restaurant. The Lobster brunch is very good. It is also within walking distance of Rodeo Drive and that whole shopping area.
I also recommend Lawry's steak house while you are here.
Rent a car.

The Montage Resort just opened up a new hotel in Beverly Hills. I have not been there but I go to the one in Laguna Beach all the time. I would bet it is top notch. They are doing a lot of deals right now too.

The first thing to keep in mind is that LA is known for its sushi. With that in mind, I recommend a few sushi places and some other places that you'll want to check out.
Sushi:
Matsuhisa: I don't really go there but it's long been regarded as one of the best in the US.
Ursawa: Perhaps the best sushi restaurant in the US (really more of a Japanese place than just sushi). But it's like $450/person and you gotta reserve well in advance.
Sushi Bistro Wa: More of a locals place without the greatest decor. But the sushi is fantastic and the price is exceedingly reasonable ($70/person). Make a res at the sushi bar and ask to sit in front of Hiro. He's my man.
Other Places:
A.O.C.: Kind of a Cal French tapas place. You should definitely check it out. Make a res now cause they have a waiting list.
Angelini Osteria: Great Italian place.
Capo: Great Italian place in Santa Monica. Lots of food. Big bill.
Sona: Great Cal French place. Would be a good romantic choice for the wifey.
Cut: Wolfgang Puck's steak place with real kobe beef. Quite pricey (like $250+/person if you get the kobe and a nice bottle of wine)
Providence: Another Cal French kinda place. Very good but a little pricey.
One fun thing to do is to drive up to Malibu during the day, stop at Paradise Cove and have some drinks. Then on your way back down stop at Moonshadows and have a snack and some more drinks.
Another fun thing to do is to drive down to Manhattan Beach and have breakfast at Uncle Bills, then walk around the town and check out the shops and the beach for a while.

The new Montage is nice and it's right in the middle of the action. I think it's going to be a big hit this summer as they have a big outdoor area that will be hopping. But the few times I've been there it's always seemed a little less lively than I would expect.
