I think for three nights you should do the following:

Matsuhisa or Wa (BTW, the chefs/owners of Wa used to be chefs at Matsuhisa)
Capo
A.O.C.

Make your reservations now.

Back to hotels.... I'm not a fan of Raffles, the rooms look like some Zen master designed them in 1987 and they have old TVs... The Penninsula is 10x the hotel experience that Raffles is, Monogrammed pillows FTMFW.
