this same philosophy applies in our food chain - they are tons of forgotten breeds of poultry, pork, and beef that have died out, or are alive in very small quantities, because mass industry replaced them w/ one breed.
there's a "heritage" movement afoot to save the forgotten breeds (and they often taste better) by breeding these animals for consumers to eat.

That heritage movement sounds interesting, do they sell the meat through niche stores or is it only served in certain restaurants?

I was in Africa last fall. I did not hunt but went on safari at a few different locations: here are few pics...you can p-shop some cross-hairs on the animals if you want.




However, if you really want to hunt a dangerous animal, I would head for Australia instead where you can stare death right in the eye:
