Haha, how did you know we used steak? They are made of some sort of tough, low friction polymer plastic like delrin. Some are also made of leather.
I have crashed once on track a couple of years ago. I highsided at California Speedway exiting a turn because I had a hole in my rear tire and lost pressure.

Dude that is so cool man! Thanks for the pics man. I am so jealous that you can do that, I think I would be dead in two seconds if I even attempted to ride a motorcycle. Good luck and stay safe (relatively safe since ummmm riding a motorcycle around turns at 70mph with your knee on the ground is well you know)
