In this case it means they only offer black, several whites and silvers, and dark colors. Nothing loud like guards red, grabber blue, or signal green.

I have the UK price list that I'll attach below. Availability of some options may have changed since this was issued so be sure to cross-reference the 12C's online configurator at the McLaren Automotive website.
I haven't seen one yet for other markets, but it is safe to assume there won't be a whole lot of variance.
