I've never understood why the centercaps on the wheels are red on one side and blue on the other. Does anybody know?

It is a safety feature designed to tighten to prevent loosening while the wheel is in motion. Therefore you cannot interchange from side to side.
So basically they are color coded on each side to prevent stripping.
