they do it tuned certain ways.

I had a 05' 430 coupe that spit blue flames in the morning at certain temps as well. Also a local ( tuned incorrectly f40 ) throws flames all the time as well.

Agreed, my buds Gallardo does it when he's really on it. Totally cool visual at sunset or night.
