I am going to get new speaker, head unit, and i want to get a custom sub box in fiberglass.

Technicar FL in WPB - they do our stuff, RENNtech, lots of CEC/Brabus, Palm Beach Motorcars, etc. Best in the biz.

While I have no connections to any shops down there, in addition to the above you may want to look up some of the higher end brands (Morel, McIntosh) and locate a dealer as those companies tend to only allow high end shops to carry their products. Then you can go see the shop for yourself.
