Any idea what a "decent" race simulator setup runs for a house ? I imagine the range is very wide, but whats the best bang for the buck simulator out there, turnkey ?

Turnkey simulator setups often cost $5k and up, and that's before you consider the PC running the simulator.
Of course, it depends on what you want it to do. Projectors? Multi-screen? Panoramic view? Motion platform? Skeletal frame? Full cockpit? Working gauges? Like you said, the range is huge.
Best thing is to build it yourself. Get the level and quality of components you need and nothing more. You can end up paying for "assembly" and "prefab" with the turnkey stuff and there's no need for that.
Of course you could also spend very little to just get "proper ergonomics" which by themselves make all the difference in the world in terms of immersion. For a couple years I used a PVC frame ($20), a racing seat from Summit ($100), and custom pedal mount ($30). I used my desktop gaming PC w/ widescreen monitor and steering wheel pedals that I already had and it was a blast. Going that route lets you either "get it out of your system" or further define "what works best for you" for taking the next step (eg. steel frame, bigger monitor, better seat, higher quality wheel and pedals, etc).
So ya, the range is huge! But fun to explore as well.
And if you want flight too...it gets super crazy!
It's actually easier to build up a flight 'pit with off the shelf components... throw enough money at the vendors these days and you could easily build a quite realistic flight deck in your home with almost no effort other than finding where to plug in all the USB gear!
