I've been told this since the beginning of time but I am not sure why. I am, of course, only looking at 6speeds. Don't need no computers to help me change gear.

 

Who told you 04-05's are no-no's? Whoever did does not know what they are talking about.
6speeds are great. 04-05's have different gearing than the newer models. Other than that, they are pretty much the same (front suspension adjustable electric ride height became an option in the later years). The SE was introduced in 06 which had a bit more Hp (and this the car they continued as the regular G from 07 on).

 

06+ has 520hp vs 500hp in 04-05 (I am pretty sure all 06 G had the SE engine, not just 07+).
The front-end lift also changed in 06, from an external system to one within the shocks (IIRC).
Gearing changed - faster and more practical.
Clear bonnet came in 05 and Callistos came in 06 (IIRC).

Overall, I wouldn't say 04-05 is a bad car. But given the price differences, the 06 is a better car.

E gear was the main problem on the early G's...which was sorted out in the 06 and later models. Obviously since you like the 6 speed this is not an issue to you. as stated before you will just have the longer gearing in the 04-05.

When I brought up the subject of a G with my wife, I got the "Lambos are for douchebags" speech... No Gallardo in my (married) future.
