New iMac and new to Apple, must-have software?

Generally speaking neither consume many resources, but they will suck up a lot of bandwidth if you let them.

How do you prevent them from doing that?

I'll assume you're talking about both. For overall performance, (this sounds so simple but can be ignored by many) when you're done with an application, then quit it! Literally, either right click and select 'quit,' or at the menu bar for instance, if you were done with safari, go Safari ---> Quit. Command + q does the same. For bandwith and network sluggishness just try not to go too crazy with the torrents. You can manually adjust the maximum allowed DL speeds, but in your case just try to only limit yourself to 2-3 downloads at max and you won't really notice a difference in surfing speed. But like I said just keep running applications to a minimum and don't go torrent-crazy and you'll be fine. On a PC, good freaking luck.

Both have the ability to throttle bandwidth usage. I don't use either of them personally, but, check the preference settings under connection and/or bandwidth. You should be able to limit the number of incoming connections and uplink bandwidth.

& as y'all are in school, I'd recommend the student edition of Office.
Unfortunately, Mac comes up a bit short with Pages & Numbers imo
Only other program I'd recommend is PhotoShop Elements, unless you are heavy into graphic manipulation, then go for the full blown edition of PhotoShop.
Mac does have the capability of running Widows 7 thru whats called Bootcamp, which is installed on your system.
Parallels will allow you to run both OS's at the same time.

I was a diehard PC user and MS Office lover for many many years, but switched to Mac about four years ago. I'm actually going to go against the crowd and vote for Apple Pages (and the rest of iWork) over Microsoft Word. I've found Microsoft Office to be horribly slow bloatware on Macs... Granted, Pages might not have all the features of Word, but on balance, it does come with much nicer templates and more stable behavior.
Furthermore, it's super duper cheap. You can get the full version of iWork for $39 as a student.
