Got mine on Friday, pretty happy with it for the moment. The only thing is that although I turned off WiFi and BT, Push Mail eats the battery VERY quick.
Apps I've installed for the moment:
iBlacklist (SMS/Calls Block/Hide)
Lockdown (Lock Apps)
Cycorder (Rec Videos)
CopierciN (Copy & Paste)
Searcher (Search in SMS, Mail, etc)
PdaNet (Use the iPhone as a Modem)
Reminder (Reminds SMS/Mail not read)
GPSLite
Bloomberg (Stocks & News)
Dynolicious

Then you download the App's from Cydia (It's an app that you have on the iPhone once you do the Jailbreak).

I've had mine for a few months now...
My tips...these extend battery life...
Turn down the screen brightness, and turn off WiFi. By turning off WiFi, your phone won't be searching for WiFi hotspots all the time and the battery will stay charged much longer.
Its a fun device! I just got the google earth app, and a voice recorder.

Basically Jailbreaking allows you to add third party applications to your iPhone (In other words, the one that aren't on the App Store). You can restore it anyways with iTunes, it's not risky at all and it does not void warranty.

QuickPwn'd 3G iPhone here. I have some basic apps on mine....Bank of America, Twitteriffic, Winterboard, Evernote, Wikipanion, Air Sharing, Pageonce, Shazam, PdaNet...some games. If you were interested in jailbreaking your iPhone use QuickPwn, it's by far the easiest way. I wouldn't really worry about voiding the warranty because you can always restore it in iTunes. My good friend was a lead genius at an Apple Store and he had his phone QuickPwn'd. No issues whatsoever, just make sure to restore it back to the original software when you go to have it worked on at the store.
If you guys get a chance to go to Disney in Orlando, they were original Beta testers for the 3G iPhones and their 3G network is crazy fast.
