Some ideas for other animals we could kill for fun..
WWF - Priority species
I was thinking about getting my Vacuum cleaner covered with snow leopard skin...would look cool ;o) and maybe my speakers in the living room with some smooth reef shark skin.....

To be honest as long as its from a sustainable source (died naturally/culling) any skin is fine, so long as it doesn't become super popular and then poachers get involved. Good luck explaining that to everyone who sees your watch though

Animal skin use
whale foreskin is my absolute fave at the moment... my dog's drinking bowl is covered in the stuff, looks awesome!
The most luxurious is of course to get the foreskin as a single piece (no stiching).. those are better adapted for belts than wristwatches (perhaps baby seal foreskin might be feasible).
Either way, you can't go wrong, animals were made to be worn!
