Red Rock is great, but it is way off strip. Provided you don't mind that, I highly recommend it. Their spa is my favorite in town and I've been to quite a few. Good restaurants, great pool area and a movie theater, too. Rooms are very nice, especially the high roller suites. If you're going to play, check into it!

Unfortunately, no. Not much of a gambler, I'd rather spend money on cars and shoes 
*edit..in case you're wondering how I know about the suites, we rented one for our daughter's b-day. They have toilets there that do everything except offer a hand for wiping.

Wynn has good rooms but I've heard the same about palazzo. Its one of the casinos I never worked for. 
I've personally stayed at Red Rock as a local in town weekend getaway. If you don't mind being off the strip it is very nice. The pool is awesome there. Cherry (the club) is fun, and indoor/outdoor, spills into the pool area at night. You can get an outside cabana instead of a VIP booth which is awesome.
You need to know that if you get a room facing the pool you will be able to hear the club at night. The solution? Get a room not facing the pool or close down the club.
They also have a movie theater and bowling alley in the casino which are added bonuses. There is a cigar friendly bar across from the steakhouse, forgot the name. But cigars/ashtrays are available at the bar.
I've never played at the poker room there, so can't speak to the players, bonuses, etc...
Its close to red rock canyon itself which is the prime outdoor activity area for all vegas. If you're into it you can rent mountain bikes or road bikes close by at las vegas cyclery, rock climbing, hiking, horseback riding. Also there is a one way 13 mile twisty scenic loop if you want to rent motorcycles or sports cars. My brother got a cobra replica and had some fun out there.
You might also consider off strip at the "M" resort. Well, its way off strip but is brand new and high quality. I ate at Veloce Ciba there which is a interesting restaurant with an incredible view.

I stayed at Mandalay last time and I was impressed w/ the room. I had a strip view, it suited all my needs (I was solo) but had a great layout to get work done or just relax.
I'm going in June and have one night booked at the Mandarin Oriental in City Scape (no casino) and then have 3 nights that were comp'd at Wynn. I'll report back after the stay.
From what I remember the poker room at Mandalay was small and didn't have a ton of games, it was sufficient for not going to another casino though.
The pool at Mandalay was great, lazy river, tons of hidden seating, pretty big from what I remember. I'll be hitting Hard Rock for Rehab Sundays this time around and the pools at Wynn.
Also have you heard of or used the $20 trick? When checking in sandwich a $20 between your license and credit card and ask the front desk person if there are any complimentary upgrades available at this time. 9 out of 10 times you will get upgraded to some extent, the other one time you loose $20....but hey it's Vegas...just consider it your first lose

Money pretty much talks everywhere, especially in Vegas. I always love the look on people's faces when I walk out to valet and there are 100 people waiting for their car. They didn't see that I slipped the guy 10 or 20 bucks to bring mine first.
