Need some iPhone help

Well thanks to AJ, I finally picked up my iPhone and love the thing. However, there are a few quirks to it, and I'm not sure how to get this one resolved.

Does anyone know how to remove email addresses that have not been added to your contact's list? For example, I respond to an email on my iPhone. That address is now saved in some temporary contact list, and when I am composing an email I want and just happen to hit on the first letter, the unwanted address pops up. This is bugging me...any ideas on how to nuke unwanted addresses?

Btw, this is on a 3Gs that is not jail-broken...prefer to keep it that way if possible.

Eh, everything I've seen says you can do it with a couple of apps but that will require you to jailbreak. I'll keep digging but it doesn't look good.
