on the configurator seems to me more "azure blue" than "sapphire black"

Definitely not Azure Blue. This is an Azure Blue car:

Sapphire Black is supposed to have some Blue in it. Whether it has as much blue as what we are seeing on that 12C HS remains the question. It could be that the photographer played with the Saturation and Color Balance in order to really bring it out in his images too.
