Every single time I am forced to start this sorry piece of shit software (bank requires it) it is doing some kind of auto-update, restarts and then changes the start page into some kind of shitty "You are now using version 84.490328" homepage. It is several times per week!

I can't seem to figure out a way to shut auto-update off completely. So before I hunt down and kill whoever invented the slowest and most buggy shit browser known to man, does anyone know whether these updates can be turned off anywhere? I can't find it!!

Go into Preferences -> Advanced -> Update. You should see something there that says "turn off".
